So,any way, I have to work tonight too. I'm covering for one of the girls at work who needed a couple of days off. She's working for me Friday night, because there's a mother/daughter Luau at the church. I need to take a Hawaiian dessert. Anybody know of anything besides Pineapple upside down cake?
So, since I'm exhausted and we have to go to Sister Rasmussens house today for a photo shoot with the boys, (I'm very excited about this, can't wait to see how they turn out) I plan on getting absolutely nothing done. I do have a load of laundry in, but I'm not going to kill myself over it. I don't plan on organizing anything (didn't organize anything yesterday either, seems I've fallen off the wagon again). I'm giving myself permission to take a day off. I might not even get supper together tonight. There's leftover spaghetti in the fridge, if it comes down to it, I'll reheat that for a 3peat.
Thought I might post a list though of what I would like to accomplish this week. It goes something like this:
- clean the bathrooms
- focus on the bathrooms for organization projects this week
- get my kitchen island cleared off (yet again)
- tackle the mountain of laundry, bring it down to maybe a mole-hill
- keep the dining table cleared off and dust-free
I think that's going to be it. I want to keep it manageable.
Today should be interesting. The boys took an early nap this morning. I don't know if I'll be able to get them to take another nap before noon, when we're supposed to do the pictures. So, hopefully they won't be crabby. I hope it goes well.

Here's a goodie:
Wiki Wiki Coconut Cake
1 box white cake mix
1 can coconut milk
1 16 oz whip cream
1 C shredded coconut
Prepare cake as dir. Poke holes w/chop sticks or skewer (not all the way through the cake though). Pour coconut milk all over the cake & refrigerate until ready to serve (or right before you leave for the diner). Spread on whip cream and sprinkle coconut flakes.
I got this from a Hawaiian friend in my old ward. It's fairly quick and easy. Hope it helps :)
PS - Get some sleep! Ask grandma or someone to trade you sleeping quarters for the night/weekend or get some ear plugs! I LOVE MY EAR PLUGS!!!!!

Coconut is Hawaiian, right? (You see how authentic I am). Mix up a 4-serving pack of vanilla pudding with 1 1/2 cups milk, and fold in a container of Cool Whip and some shredded coconut. Then toss it in a graham-cracker crust and top with toasted coconut. I used to make this all the time because it only takes 5 minutes or so.

i've got a great (no bake) Hawaiian pie recipe that my mom makes. It is delicious & EASY!!!! One batch makes 2 pies :) Let me know if you want the recipe.

Nicole: The photo shoot went pretty well considering. Jason was really good. Very happy. Justin was pretty good too, but a little grumpy. The funny thing is, Justin took a nap before, and Jason didn't, so you'd think it would have been reversed.
Here is the recipe for the Hawaiian Pies:
(this is my mom's recipe)
1 can of sweetened condensed milk
3 T. lemon juice
1 can of crushed pineapple, drained
1 can of mandarin oranges, drained
1 c. chopped pecans
1 tub of Cool Whip, thawed
2 bananas, sliced or chopped
2 graham cracker crusts
cherries, optional
Mix together and sweetened condensed milk, lemon juice, pineapples, mandarin oranges, and pecans. Fold in Cool Whip. Gently fold in bananas. Spoon into crusts. Top with cherries, if using any.
Cover and refrigerate at least 3 hours before serving.
*Put on your Hula Skirt & Enjoy!
